Top 3 things to do
1. Mindil Beach Sunset Market
A market at Mindil Beach, near the city center, on Thursday and Sunday nights in the dry season, from late April to late October. In August 2022 it had about 200 stalls, about 60 of them food stalls, and it started in 1987.
Tip: It runs only on those two nights, so it is for a call that stays into the evening. Ask on board.
2. The Waterfront and Wharf Precinct
Wikipedia describes a redevelopment of the Wharf Precinct with a large convention and exhibition center, apartments, shops and places for entertainment. Construction started in 2005. The Northern Territory tourism page lists Stokes Hill Wharf and the Darwin Waterfront among its attractions.
Tip: Our sources give no walking time from the berth. Ask on board.

3. The story of 1942 and Cyclone Tracy
On 19 February 1942, 188 Japanese warplanes attacked Darwin in two waves and at least 243 people were killed. Cyclone Tracy struck on 25 December 1974, killing 71 people and destroying over 70 percent of the city's buildings. The Northern Territory tourism page lists the Darwin Military Museum and the Museum and Art Gallery of the Northern Territory.
Tip: Our sources give no opening hours for either museum, so check them for your day.

What to skip
Litchfield or Kakadu on a short call
Wikipedia says Darwin is a hub for tours to both national parks, but our sources give no drive time. Ask on board before you plan a day there.
Before you go ashore
You do not have to book a tour: you are free to go ashore on your own. Royal Caribbean sets the all aboard time about 30 minutes before the ship sails, posts it near the gangway, and says the ship does not wait for guests touring on their own.
